1 cup basil
½ cup cashew, soaked overnight
½ cup nutritional yeast
1 tablespoon lemon juice
2 cloves garlic
1 tablespoon olive oil
Salt, to taste
1 pound (454 g) baby Bella mushroom, stems removed

  1. Prepare the pesto. In a food processor, blend the basil, cashew nuts, nutritional
    yeast, lemon juice, garlic and olive oil to combine well. Sprinkle with salt as
    desired.
  2. Turn the mushrooms cap-side down and spread the pesto on the underside of
    each cap.
  3. Transfer to the air fryer oven. Select the AIR FRY function and cook at 400ºF
    (204ºC) for 15 minutes.
  4. Serve warm.
