1 cup basil
½ cup cashew, soaked overnight
½ cup nutritional yeast
1 tablespoon lemon juice
2 cloves garlic
1 tablespoon olive oil
Salt, to taste
1 pound (454 g) baby Bella mushroom, stems removed
- Prepare the pesto. In a food processor, blend the basil, cashew nuts, nutritional
yeast, lemon juice, garlic and olive oil to combine well. Sprinkle with salt as
