3 (4-ounce / 113-g) low-sodium boneless, skinless chicken breasts, cut into 1-inch
cubes
1 small red onion, sliced
1 red bell pepper, sliced
1 cup green beans, cut into 1-inch pieces
2 tablespoons low-fat ranch salad dressing
2 tablespoons freshly squeezed lemon juice
½ teaspoon dried basil
4 cups mixed lettuce

  1. Select the ROAST function and preheat MAXX to 400ºF (204ºC).
  2. In the air fryer basket, roast the chicken, red onion, red bell pepper, and green
    beans for 10 to 13 minutes, or until the chicken reaches an internal temperature of
    165ºF (74ºC) on a meat thermometer, tossing the food in the basket once during
    cooking.
  3. While the chicken cooks, in a serving bowl, mix the ranch dressing, lemon juice,
    and basil.
  4. Transfer the chicken and vegetables to a serving bowl and toss with the dressing
    to coat. Serve immediately on lettuce leaves.
